Sesame Seed Protein Introduction

Sesame, often called the "queen of oils" or "crown of the eight grains," and also referred to as oil hemp or flax in some contexts, comes from the seeds of Sesamum indicum, an upright annual plant reaching 60-150 cm in height. It thrives primarily in tropical areas and certain temperate zones. The protein in sesame seeds is composed of approximately 80% alpha-globulin and 20% beta-globulin. Compared to FAO reference standards, it boasts elevated levels of key essential amino acids, especially arginine, leucine, and methionine.
